Cast iron cooking is as popular now as it was centuries ago. As in the past, today’s cooks have discovered that cast iron skillets, griddles, pots, pans, Dutch ovens and other types of cast iron cookware  are capable of producing an amazing array of delicious, home cooked meals.  We have collected all kinds of recipes  and we hope you will use them to create some great cast iron cooking for your family and friends!
You can choose from blueback salmon, channel bass, or sea bass for this 10 minute recipe! Any red fish will do just fine and have its own unique taste. A word of caution, this definitely qualified for outdoor cooking as it produces an abundance of smoke. Smoking it inside would most likely set of smoke detectors so enjoy a nice cook out!
Cooking Instructions:
Prep time:5 minutes
Cooking time:5 minutes  (per batch)
*Makes about 6 servings
Ingredients:
- 12 tablespoons unsalted butter, melted
- Cajun seasoning
- 6 redfish fillets
Cooking Steps:
A) Heat the cast iron skillet (preferably 14-inch) on a propane cooker (outdoors of course).
B) Using the melted butter, evenly coat the fish fillets and season with the Cajun spices.
C) Place a few fillets on the cast iron skillet and add a bit more butter to the top of the fish. Be extremely careful not ignite anything!
D) Cook for about 2 minutes on each side then remove from skillet. Repeat until all fillets are completely cooked.
E) Turn off cooker and enjoy!
