Ingredients

  • 6 crisp tart apples (2 pounds Granny Smith, Jonathon, Holiday; enough for 6 cups sliced)
  • ¼ cup granulated sugar
  • 2 tablespoons whole wheat flour
  • 1 tablespoon lemon juice
  • 1 pinch kosher salt
  • ½ teaspoon cinnamon

For the biscuit topping

  • 1 cup all purpose flour
  • ½ cup whole wheat flour
  • 2 teaspoon baking powder
  • ¾ teaspoon kosher salt
  • 6 tablespoons cold unsalted butter
  • ½ cup Greek yogurt
  • ½ cup milk
  • Sweetened whipped cream or vanilla ice cream, for serving

Instructions

  1. Preheat oven to 425°F.
  2. Make the filling: Peel and slice the apples. In a 10-inch ovenproof cast iron skillet, place the apples and mix in the granulated sugar, wheat flour, lemon juice, kosher salt, and cinnamon. Place the skillet in the oven for 10 to 15 minutes, until the apples are slightly thickened and bubbly.
  3. Prepare the biscuit topping: In a large bowl, combine the all purpose flour, whole wheat flour, baking powder, and kosher salt. Cut the butter into small pieces, then cut it into the flour mixture using a pastry cutter until it resembles coarse meal.
  4. Add the Greek yogurt and milk and stir just until dough is formed. If it seems dry and is not holding together, add slightly more milk. Do not overmix.
  5. Add the topping and bake: Remove the skillet from oven and drop small rounds of dough onto apples, leaving some space between each biscuit. Return the skillet to oven and bake until the biscuits are golden brown and fruit is bubbling, approximately 20 to 30 minutes.
  6. Cool about 15 minutes before serving. Serve with whipped creamvegan whipped cream, or vanilla ice cream.
